Off days during probation period

Question 1:

Employee still under probation for 3 months and took leave. Should I deduct their annual leave which is 8 days/year?

You can do that if you want but make sure you don't give more than what he is entitled to. Under the EA, an employee must complete 12 months service before entitling to  annual leave with pay.
